Winter Warmer Soup

The Winter Soup is from a big fat book on vegetables that I guess I bought at work some time ago--it turned out to be a great find. Must try more recipes from this book.

"Winter Warmer Soup"
The Complete Ency of Vegetables & Vegetarian Cooking
Denny & Ingram

3 med carrots, chopped
1 large potato, chopped
1 large parsnip, shopped
1 large turnip or small rutabaga, chopped
1 onion, chopped
2 TB oil
2 TB butter [I used Earth Balance margarine]
6 cups water
salt and pepper
1 piece of fresh ginger, grated
1 1/4 cup milk [soy]
3 TB sour cream or yogurt [I used tofu cream cheese, but I would also try silken tofu with some lemon mixed in]
2 TB chopped fresh dill
fresh lemon juice

* put the root veggies and onion into into a large saucepan with the oil and marg
* fry lightly, cover and sweat the veggies over low heat for 15 mins
* pour in water, boil and season well
* cover and simmer til veggies are soft
* strain the veggies, reserving the stock
* add ginger, and purée in the food processor or blender
* return to pot with the stock, add milk and stir while it reheats
* remove from heat and stir in sour cream (or whatever), and dill and lemon juice and more seasoning is needed (but don't boil or might curdle if using real milk)
