cooking technique: What's a Cook to Do? James Peterson
I'm not a great cook, but it's easier to eat healthy and vegan, and it's relaxing. So I decided that, like anything else, I can get a bit better if I just read some books and work at it. ;-)
I once watched Jacques Pepin explain how to use/sharpen a knife right, and how to chop vegetables, and I realized... ah yes, the point of Technique is because it speeds things up! So I bought this little book by the English Pepin, and anytime I need to chop up a veggie, or want to know more about a cooking term, I open him up.
