Baking Tip

I once put craisins (dried cranberries) in a muffin recipe, but they were all hard and yucky. Yet when I ate the defrosted ones, the craisins were plump and moist. Hmmm. You see the problem.

Moskowitz recommends for raisins (and I've done this now with craisins and dates) that you soak them in hot water (that's been boiled) for 20 minutes before adding them to your recipe. She's brilliant!
