First of all, in some recipes you can exclude eggs easily. For example, pancakes. And then there are recipes which would be very hard to egg-replace, such as Angel's food cake! But, if you need to replace the eggs, here are the two I've tried:
Flax Seeds:
This works very well.
1 egg = 1 Tablespoon of flax seeds + 3 Tablespoons of water
* grind the flax seeds in a blender [or a coffee grinder]
* add the water [Because flax seeds contain oil, they all glom together when blended. I knock the blender container around to loosen the seeds before adding the water.]
* blenderize
* stick in fridge a couple minutes until gummy
Flax seeds should be kept in the freezer, they go rancid easily.
Of course, this is also a source of Omega-3 fatty acids, which apparently survive the cooking process.

Easier than flax seeds, but I found my choco chip cookies were flat instead of puffy, so I think the seeds work better.
