recipe: avocado with black bean salad

May 16th, 2006

RECIPE: Avocado with Black Blean Salad @ 03:40 am

Weirdo Ingredients: none
Source: Westbrae Natural Products

1 Tbsp lime juice
1 1/2 Tbsp olive oil [or flax seed oil, if you be needing omega fatty acids]
1 can black beans [or, like, any beans! or mixed beans!]
1/4 green bell pepper, chopped [or red! or yellow!]
1 clove garlic
1/2 tsp salt
1/8 tsp pepper
1 1/2 tsp cilantro
1 avocado - quartered [but not drawn]

You're supposed to spoon the bean mixture over the avocado quarters. Very elegant no doubt, but I just chop up the avocado and put it in the salad--though you may want an avocado that's a little more on the firm side. And really, I use two avocadoes, because I is an avocado maniac. And more bell pepper. More... just... more.
